Homely Roasted Seasonal Vegetable Tray

Beautifully roasted vegetables, full of colour and character, a side dish that can easily steal the show at dinner time. With Simply Seasoned Homestead Garden Blend, every bite bursts with natural sweetness, aromatic herbs, and the kind of savoury depth that turns simple veg into something irresistible.
Ingredients
- 700 g mixed vegetables (carrot, courgette, red onion, bell pepper, sweet potato, broccoli, mushroom), cut evenly into small bitesize pieces (1 lb 8 oz)
- 2 tbsp olive oil (30 ml)
- 2 tsp Simply Seasoned Homestead Garden Blend (6–8 g), to taste

Method (Oven)
- Preheat oven to 210°C (410°F).
- Toss vegetables with olive oil and Homestead Garden Blend until coated.
- Spread evenly on a tray — avoid overcrowding.
- Roast 15 minutes, stir, then 10–15 minutes more until caramelised and tender.
Method (Air Fryer)
- Toss vegetables as above.
- Air fry at 200°C (390°F) for 10 minutes, shake, then another 4–8 minutes until lightly charred.

- When cutting all of the different vegetables, try to cut them all into similar sizes to help them roast and cook through evenly.
